Soy Sauce Braised Eggs (Ajitsuke Tamago)
INGREDIENTS:
- 4 eggs
- 1/4 cup soy sauce TM KIM CHI
- 1/4 cup water
- 1 tbsp mirin (or rice vinegar)
- 1 tbsp sugar
METHOD OF PREPARATION:
- Bring water to a boil. Gently lower eggs and boil for 7 minutes (soft) or 9 minutes (medium).
- Transfer eggs to an ice bath. Peel once cooled.
- Mix soy sauce, water, mirin, and sugar in a container.
- Submerge eggs in marinade for at least 4 hours (or overnight).
- Slice and serve with ramen or rice.
