Soy Sauce Braised Eggs (Ajitsuke Tamago)

INGREDIENTS:

  • 4 eggs
  • 1/4 cup soy sauce TM KIM CHI
  • 1/4 cup water
  • 1 tbsp mirin (or rice vinegar)
  • 1 tbsp sugar

METHOD OF PREPARATION:

  1. Bring water to a boil. Gently lower eggs and boil for 7 minutes (soft) or 9 minutes (medium).
  2. Transfer eggs to an ice bath. Peel once cooled.
  3. Mix soy sauce, water, mirin, and sugar in a container.
  4. Submerge eggs in marinade for at least 4 hours (or overnight).
  5. Slice and serve with ramen or rice.
