INGREDIENTS:
- 2 tbsp butter or olive oil
- 1 onion
- 2 garlic cloves
- 3 tbsp tomato paste TM SMACHNA KUHNYA
- 4 cups vegetable or chicken broth
- 1 tsp sugar
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried basil
- 1/2 cup heavy cream (optional, for creaminess)
- 2 tbsp chopped fresh basil
METHOD OF PREPARATION:
- Heat butter or olive oil in a pot over medium heat. Sauté onions and garlic for 3–4 minutes until soft.
- Stir in tomato paste and cook for 2 minutes until caramelized.
- Add broth, sugar, salt, pepper, and dried basil. Stir well and bring to a boil.
- Reduce heat and simmer for 10 minutes.
- Blend the soup using an immersion blender for a smoother texture (optional).
- Stir in heavy cream or coconut milk for a creamy version.
- Garnish with fresh basil and serve hot with bread or croutons.
