Tomato Paste Soup

INGREDIENTS:

  • 2 tbsp butter or olive oil
  • 1 onion
  • 2 garlic cloves
  • 3 tbsp tomato paste TM SMACHNA KUHNYA
  • 4 cups vegetable or chicken broth
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried basil
  • 1/2 cup heavy cream (optional, for creaminess)
  • 2 tbsp chopped fresh basil

METHOD OF PREPARATION:

  1. Heat butter or olive oil in a pot over medium heat. Sauté onions and garlic for 3–4 minutes until soft.
  2. Stir in tomato paste and cook for 2 minutes until caramelized.
  3. Add broth, sugar, salt, pepper, and dried basil. Stir well and bring to a boil.
  4. Reduce heat and simmer for 10 minutes.
  5. Blend the soup using an immersion blender for a smoother texture (optional).
  6. Stir in heavy cream or coconut milk for a creamy version.
  7. Garnish with fresh basil and serve hot with bread or croutons.
