Vegetable Yaki Udon with Unagi Sauce

INGREDIENTS:

  • 2 servings of any noodles
  • 1 tbsp vegetable oil
  • 1/2 cup mushrooms
  • 1/2 cup broccoli florets
  • 1/2 cup bell peppers
  • 1/2 small onion
  • 2 cloves garlic
  • 3 tbsp unagi sauce TM KIM CHI
  • 1 tbsp soy sauce TM KIM CHI
  • 1/2 tsp black pepper
  • 1/2 tsp sesame oil

METHOD OF PREPARATION:

  1. If using fresh noodles, separate them gently. If using dry noodles, cook according to package instructions and drain.
  2. In a small bowl, whisk together unagi sauce, soy sauce, black pepper, and sesame oil. Set aside.
  3. Heat 1 tbsp vegetable oil in a pan or wok over medium-high heat.
  4. Add onions, mushrooms, and garlic, and stir-fry for 2 minutes until slightly softened.
  5. Add broccoli and bell peppers, and stir-fry for another 3 minutes until vibrant but still crisp.
  6. Add the cooked noodles and pour the prepared sauce over.
  7. Toss everything together for 1–2 minutes until well coated and heated through.
  8. Optionally, drizzle extra unagi sauce on top for extra flavor.
